For the New York-Style Cheesecake:- 3 (8 ounce) packages cream cheese, very soft
- 1 cup Full-Fat Sour Cream
- 1 1/4 cups granulated sugar
- 2 teaspoons pure vanilla extract
- 3 large eggs + 2 egg yolks, at room temperature
- 3 tablespoons all-purpose flour
- 1/2 cup heavy cream
For the Crust:
- 2 cups graham crackers, pulsed into crumbs
- 1/3 cup sugar
- 1/4 teaspoon salt
- 7 tablespoons butter, melted
For the Fresh Strawberry Sauce:
- 1 1/2 cups fresh strawberries, hulled and sliced
- 1/4 cup sugar
- 1 small lemon, zested
Instructions:
Preheat oven to 325 degrees (F).For the Crust:
- Lightly spray a 9" springform pan with non-stick spray; set aside.
- In the body of a blender or food processor combine graham crackers, sugar, and salt; blend until the crackers have been completely pulsed to crumbs. Add melted butter; stir well to combine. Press down firmly into the prepared 9-inch springform pan; set aside.
